Herb-Infused Roasted Baby Potatoes
Treat your family to a St. Patrick's Day feast with these savory, crispy, herb-infused roasted baby potatoes.
Ingredients:
- 1 drop Rosemary RMO essential oil
- 2 tablespoons olive oil
- 2 tablespoons butter
- Toothpick dipped ¼ inch in Oregano RMO essential oil
- 1 teaspoon dry Rosemary
- ½ teaspoon dry Oregano
- ½ teaspoon Garlic Powder
- 5 cloves minced garlic
- 3 lb red or yellow baby potatoes
- Parmesan to taste
- Salt and Pepper to taste
Directions:
Rinse baby potatoes and place them in a large bowl. In a small bowl combine melted butter, olive oil, essential oils, and dry spices and set aside. Finely mince garlic and add to potatoes. Add oil mixture and stir until potatoes are coated.
Place potatoes on a cookie sheet in a 450 degree oven and bake for 20 minutes, until just tender. Or place them in a crock pot on high 2-3 hours stirring occasionally.
Add salt, pepper, and Parmesan to taste before serving.
