They're packed with a wonderful blend of vanilla pudding, pumpkin, and spices, and they're so simple to whip up. Plus, you won't even need to turn on your oven! With just a little bit of time and effort, you can have a whole batch of these tasty treats ready to enjoy. And as an added bonus, your kitchen will smell amazing while you're making them - it's like having a cozy autumn hug all around you!

Ingredients:

1 ½ cups Sugar
½ cups Brown Sugar
¾ cups Butter
⅔ cups Milk
3 ⅓ ounces Vanilla Pudding Mix, Instant
1 tablespoon Pumpkin Pie Spice
1 teaspoon Vanilla Extract
3 ½ cups Rolled Oats, Quick Cooking

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

Instructions:

  1. In a saucepan, combine sugars, butter and milk.
  2. Bring to a boil. Boil 2 minutes.
  3. Remove from heat and add in the pudding mix, stirring to combine completely.
  4. Add in pumpkin pie spice, vanilla and oats.
  5. Stir to combine and let stand for 5 minutes
  6. Drop by rounded tablespoonfuls onto waxed paper, and allow to cool completely.

Ingredients:

1 cup Butter
½ cup Brown Sugar - firmly packed
½ cup Sugar
1 cup Canned Solid Packed Pumpkin
1 Egg
1 tsp Vanilla
2 cups Flour
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Cinnamon
½ tsp Salt
1 cup Chopped Nuts (or Chocolate Chips)

Cook 350 10-12 min.

Penuche Frosting:

3 tbsp Butter
½ cup Brown Sugar
¼ cup Milk
Approx. 2 cups Powdered Sugar

Instructions:

Bring butter and brown sugar to a boil. Cook and stir for 1 min or until thick. Cook for 15 min, add milk and beat until smooth. Frost and enjoy!
